Resume evaluation on cloud configuration

Users may wish to evaluate current saved models using historical weights. Therefore we want to provide the following functionality. This depends on #13.

• Evaluate a model without training at all.
• Utilize existing weight path to auto load file.
• Log resulting evaluation to Weights and Biases.
• Record date related stuff to the evaluation file.

This seems to be done with our support of inference mode stuff at this point.
