Update to node 16.14.2, update all dependencies to latest minor version

I'd love actually to upgrade to node 16, since it runs natively on the new Mac M1 computers.

Tested on Release, running with Docker, in development, and development in production mode. All seem to be working. Updating node will help update some of the outdated packages which are throwing security issues :)
